- 1 loaf French bread
- 1 pt. grape or cherry tomatoes, whole
- 1 tbsp. olive oil
- 1/3 c. basil pesto
- 2 ounces goat cheese
- 2 tablespoons balsamic glaze
Preheat oven to 400° F. Cover a rimmed baking sheet with foil and set aside. In a bowl, stir together tomatoes and olive oil. Add the tomatoes to the foiled baking sheet. Roast in the oven, shaking pan occasionally, for 15-20 minutes or until tomatoes are blistered. Remove pan from oven. Slice the French bread loaf in half lengthwise. Spread pesto onto bread and layer with tomatoes. Crumble goat cheese over the tomatoes and drizzle with balsamic glaze.
Try not to use a French baguette in place of French bread.
