Toasted Brie with Peach Apricot Preserves
- 1 loaf French baguette
- 1 jar peach apricot preserves
- 8oz Brie, cut into 1 oz slices
- Olive oil
- Preheat the oven to 350° F. Cut up the baguette into 1" thick slices and place on a baking sheet. Drizzle with olive oil and salt to taste. Bake for 5 minutes, or until lightly toasted.
- Spread the toasted slices with 1 teaspon of peach apricot preserves and top with a slice of Brie. Bake for an additional 2 -3 minutes or until the Brie is warm and begins to melt.
